Coco-Walnut Chocolate Chip Cookies

Deviating from the health food for a moment, I desperately wanted cookies last night. I did NOT want to deal with the mess, and my usual patience for delayed gratification when baking was non existent. So I slammed together these cookies and MAN they turned out great! Here’s what I did in the order I did it in, and I had my first round of cookies under 15 minutes later.
- 1 cup of butter – microwave for 45 seconds to soften
- 1 1/2 cups of brown, gold, and white sugar (I used up the last bits of three bags…)
- 2 eggs
- 2 tsp vanilla
Mix the above ingredients with an egg beater until smooth enough.
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/4 cups white flour
- 1 cup unsweetened coconut
Mix these directly into the previous mixture with the egg beater. Forget using two bowls…you can mix the dry ingredients a little on top of the wet ones if you’re worried you’re going to get uneven distribution.
- 1 cup white chocolate chips
- 1 cup dark chocolate chips
- 1 cup walnuts
Now you’re going to have to get your hands dirty. Roll into 1″ balls and flatten slightly on a tin-foil lined baking sheet. Bake at 350 for 8-10 minutes.
Time-saving tip: Measure out another slice of tin foil to start rolling your second batch while the first batch is in the oven. Heck, do three sheets of tin foil and all you have to do is slide the first sheet off the hot pan, and slide the next sheet on and BOOM! You’re onto the next batch!
