No Meat for Lent Part 3
I call this “Mexi-Quin Burrito Filling” (HAHAHA) – I threw this one together pretty quickly with stuff I found in the cupboard. Here’s what I used:
- 2 cups cooked Quinoa (1 cup quinoa and 2 cups water will give you more than enough – bring to a boil, cover, and cook on low for 18 mins)
- 1 1/2 cups Black Beans (quick cook – bring to a boil, cover and let sit for 1 hour. Use fresh water and simmer on med heat for 1 hour or until beans are done)
- 1 tbsp butter
- 1/2 onion, chopped fine
- 1/2 each of green, red, and yellow peppers
- 1 package taco seasoning
Melt the butter and fry the onions for a couple minutes. Add the peppers and soften them a little. Add quinoa and black beans, a little water or broth, and taco seasoning, heating until temperature is right (no need to overcook this!).
Next, roll this mixture into whole wheat tortillas. Place the burritos in a glass casserole dish and cover with grated cheese. Bake until the cheese looks melty and awesome. Plate the burritos and top with mashed avocado, sour cream (or Mediterranean yogurt) and Salsa. We made some tater tots for the side too…mmmmmm….
Now this one was really really easy!! Only problem was when it was ready, we were so excited to eat it we completely forgot to take a picture of the final product….
