No Meat for Lent Part 2
Inspired by the “Sunburger” at the Underground Cafe in Winnipeg, I decided to try to make my own for dinner. Their secret recipe is definitely not online anywhere but I think I have a pretty good idea what is in the patties. What makes it so ridiculously tasty though is the dill sauce they drench it in. Messiest burger ever, but worth it for the taste.
Fjola’s Sunburger Patties
- 2 cups cooked brown rice
- 1 cup raw sunflower seeds
- 1/3 cup raw sesame seeds
- 1 tbsp butter
- 1/4 cup nutritional yeast (Red Star Yeast)
- 2 cups grated cheddar cheese
- 2 eggs
- salt and pepper to taste
- 1/2 cup sour cream
- juice 1/2 a lemon
- 2 tsp dried dill
- 2 Tbsp Dijon mustard
First, I melted the butter and toasted the sunflower seeds with the sesame seeds. Allow them to cool slightly.
Place the rest of the ingredients into a bowl. Mix in the toasted seeds. The mixture is too wet to form patties with your hands (lesson learned!!) so I recommend piling a lump onto a pre-heated griddle or pan and shaping into a patty.
Cover the patties on the first side to cook throughly. Flip and brown the second side – leave them uncovered to crisp them nicely.
On a toasted multi grain ciabatta bun, I layered lettuce tomato and orange peppers. Put a nice big dollop of sauce on top of the burger, and make sure you have plenty of napkins nearby!
Next time I think I will use my magic bullet to chop up the sunflower seeds a bit before adding them to the mix – the big seeds definitely dominated the texture of the patty.
