No Meat for Lent Part 1

There’s a bit of a stigma among vegetarians about the roasted veggie sandwich. Maybe it’s because for  so long that was the only other “option” when dining at a restaurant. Maybe it’s because they’re usually filled with slippery greasy reheated veggies that squirt out the other side of your bread.

Well I didn’t let that stop me – I decided to make a GOOD slippery veggie sandwich! Roasted red peppers and asparagus will do.

I cut the asparagus lengthwise and roasted both that and the pepper with olive oil, balsamic vinegar, and a little steak spice. I put it into a “One Bun” – a multigrain folded flatbread, lathered with cream cheese on one side, and chopped up some kale instead of lettuce. Topped that off with some grated cheddar and voila!
